When my plate of chicken marsala arrived, it was not what I expected (hint: red). The meal, featuring pan-seared, all-natural chicken breast finished with a marsala reduction, also comes with a side of mashed potatoes and vegetable du jour.
To create this delicious dish, the chef drenches the chicken in corn starch, then pan fries it with a balsamic reduction and finally, bakes it. The result is delightfully tender, yet crunchy on the outside, and savory but not too rich. Topped off with sautéed onions and mushrooms, this meal has a satisfying flavor.
